Spagetti Squash Pasta With Meat Sauce

For the busy person, looking for a quick nutritious dinner that won't leave you feeling full, bloated and fatigued, give this delicious Spaghetti Squash Pasta with Meat Sauce recipe a try. For those of you, like me,  who struggle with a gluten intolerance, have you found an alternative pasta you love? I have tried rice pasta, quinoa pasta, and many more but none of them really taste the way I would like, and the texture is always strange to me. Using spaghetti squash as a pasta like substitute is a great option, even if you are not struggling with a gluten intolerance, that is because it is loaded with Vitamin C, Vitamin A, Vitamin B-6 and fiber. If you never tried spaghetti squash, give this a try as an alternate to your usual pasta dinner, to add in some variety. It is quick to prepare, and the best part is you won't have to wash 2 pots, one for the meat sauce and one for the pasta water!!

INGREDIENTS:
1 spagetti squash
1.5 pounds ground turkey
1 jar of your favorite marinara sauce
1/2 large onion chopped
3-4 cloves garlic minced

DIRECTIONS:

1)  Poke a few holes in the spaghetti squash and place in microwave for 10 minutes

2) While squash is cooking heat olive oil in pan, add onions and cook until soft, add garlic until
     fragrant and then add in turkey. Cook until brown and add in sauce and simmer.

3) Carefully remove squash from microwave and allow to cool. Cut in half length wise. Remove   seeds with a spoon, but be careful not to remove too much of the actual squash. Next using a fork, gently pull the squash flesh into strands. 

4) When sauce is done, transfer a portion of the squash onto a plate and top with the sauce.
